When the last plaque donation scheme started, i.e a £5.58 standing order, I upped my standing order from £10 to £15.58.
Can I see my name on the current plaque?

Unless I've missed it.......No!

That won't have been counted.  The previous one was if you set up a NEW standing order or made a one-off Xmas giftbox donation of £20 or more.  The idea was to attract new sources of donations rather than pump up existing ones (or I'd probably have done the same as you!).

The deal is open to the 31 May 2011 which I think is Tuesday midnight  :!:    -
The one off payment of £70.00 is electronic so that could go through paypal I believe so you have about 30 hours to go
The Standing order route of £5.58 or more requires you to print the form and post. The offer stays open till midnight so dating it 31st May 2011 and posting it the following day should be perfectly acceptable. The Trust should get it within the following couple of days and that's fine.
If a form was received a lot longer after that I suspect it would be checked out as to when it was posted RM can loose things)

So don't delay sign up now before it's too late (I know on the 8th April PA28 said paperwork in by 31st May but I will bet someone £5.58 that he values the standing order highly enough not to turn it down if it arrives a couple of days after i.e. by wednesday or thursday)
